Jerusalem Artichokes

As mentioned in a previous post, we have managed to end up with enough Jerusalem Artichokes to supply our entire village for the winter! Not many of the locals around us seem to grow them, so it is a nice thing to be able to give them away (perhaps the neighbours are just being polite, but they do say they like them…). So we have moved into big scale soup making. Having just finished lunch of a couple of bowls with some fresh baguette I must say that it was delicious and I am looking forward to more helpings tomorrow…and the day after…

Jerusalem artichokes have a very distinct flavour and they aren’t for everyone, but I have found that adding carrot to them in a soup, and finishing with some creme fraiche makes a delicious soup – better than the artichokes alone. What is more, Boudie absolutely loved it!
